Budaatai Huurga (Mongolian Rice)

1 tablespoon canola oil

3 eggs, beaten

4 cups cooked rice, chilled

250g lamb mince

3 green onions, chopped

1 tablespoon light soy sauce

1 teaspoon cumin powder

1/2 teaspoon red pepper flakes

1/2 teaspoon salt 

1 carrot, finely diced

1/2 red capsicum, finely diced

1/8 cabbage, finely chopped

Budaatai Huurga is a stir-fried rice dish with beef or lamb, onions, cabbage, carrots and capsicum.


As rice doesn’t grow well in Mongolia and was brought to Mongolia via China the dish is influenced by Chinese fried rice, but traditionally uses mutton which is a common meat in Mongolia.
