Buuz (Mongolian Dumplings)

Filling

250g lamb mince

250g beef mince

1 carrot, finely diced

1 onion, finely diced

4 garlic cloves, crushed

1 tablespoon canola oil

1/2 teaspoon salt

1/4 teaspoon ground black pepper

125 ml vegetable stock

Dough

170g plain flour

1/4 teaspoon salt

1 egg

50ml water

1 green onion

For serving

1/2 cup light soy sauce

Pickled Cabbage

1/4 green cabbage

3/4 cup water

1/2 lemon, juiced

1/2 cup rice wine vinegar

1 teaspoon salt

pinch white sugar

2 cloves garlic, crushed

1/2 teaspoon red pepper flakes

1/2 teaspoon ground black pepper

Equipment you need

Buuz are dumplings which are made from a dough and stuffed with beef or mutton, onions, fresh herbs and garlic. They are characterised by a hole in the top of the dumpling, and are served with a dipping sauce and pickled cabbage or cucumber.

These dumplings originated in Mongolia and are popular during Mongolian New Year (Tsagaan Saar) which is celebrated in February.
