Khuushuur (Deep-fried meat pies)

Meat Pies

500g minced beef

1/2 onion, grated

2 cloves garlic, crushed

1 carrot, grated

1 potato, grated

1/8 cabbage, finely shredded

1 teaspoon salt

1.4 teaspoon ground black pepper

1/2 teaspoon ground cumin

 

3 cups flour

2 cups water ( more or less)

1/2 teaspoon salt

canola oil for frying (about 2cm)

​

Dipping Sauce

1/2 cup rice vinegar

1/2 cup light soy sauce

1/2 teaspoon crushed red pepper flakes

1 garlic clove, crushed

1/2 teaspoon ginger, grated

3 green onions, thinly sliced 

1 teaspoon sesame oil

Pickled Cucumbers

1 continental cucumber - sliced lengthwise, seeds removed and cut into 1cm thick half rounds

1 teaspoon salt

1/2 tablespoon soy sauce

1/2 tablespoon white sugar

1 cloves garlic, thinly sliced

1 teaspoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon hot chili oil

1/4 teaspoon red pepper flakes

Salad

2 tomatoes, sliced

1 small lettuce, leaves separated

Khuushuur are half-moon shaped pastries filled with meat, normally mutton or beef. They can also be stuffed with vegetables and kimchi, and are then deep-fried.

​

Wheat isn’t grown in Mongolia, so this dish is believed to have come from neighbouring China, and has been localised using Mongolian ingredients. The dish is normally eaten during the Naadam festival in July as a street food. The Naadam festival celebrates Mongolia’s independence from the Qing Dynasty and is also the state flag day.
